Book excerpt: Excerpt from The Manufacture of Vinegar: Its Theory and Practice, With Especial Reference to the Quick Process This book was written to fill a void in the American literature of its subject. It is true, that the modern vine gar process is no longer novel, and that a great part of the contents of this work may be found scattered over the several treatises of pure and applied chemistry; but on the other hand, there is no concise reliable American work accessible to the inexperienced or practised vinegar manu facturer, in which he can find what information is needful for carrying out his process to the best advantage. Book excerpt: Excerpt from Manufacture of Pure Cider Vinegar in the United States In this country there are no apple orchards the fruit or which is used primarily for the purpose of vinegar manufacture. The apples constituting the bulk of the stock for vinegar manufacture are either windfalls or are so gnarled and spooked as to prohibit their use for table purposes. There is still another source for cider stock and that is the cores and peslings left from apples used in the canning industry. Available in PDF, EPUB and Kindle. Book excerpt: Excerpt from How to Produce Extracted Honey To produce honey one must have a big force of bees. The honey-productiveness of an apiary is not to be measured by the number of colonies it contains, but by the number of bees in the individual colony. Therefore the only way to achieve the best results in honey is to see that each colony is in good working order by the time the flow opens. To do so it will be necessary to examine each separately in order to ascertain its condition. Special attention must be given to each queen. Every one that is in any way defective should be replaced with another that is young and vigorous. It will never do to hang on to a queen whose prolificness is doubtful. The colony which she occupies will yield very little surplus, or, in all probability, no honey at all. Far better to replace her, even if you have to buy another in order to do so. The next thing that must be taken notice of is the strength of each colony. If the flow be a month or six weeks ahead, and your weak stocks have young prolific queens, you may make an effort to build them up to full strength in time for it; but if it be near at hand, a better way is to unite them. Book excerpt: Excerpt from Honeybees and Honey Production in the United States The large number of bees indicated in the Southeastern States and particularly in the Appalachian section, while reflecting an undoubted fact, carries an impression stronger than the facts warrant, partially because the territory, is predominantly rural, but more because in that region the colonies are, to a greater extent than elsewhere, kept in small boxes, kegs, and similar receptacles which limit the size of the colony and cause heavy swarming. This latter fact tended to further exaggeration because at the time the census was taken swarming was well advanced in the South though hardly begun in the North. Book excerpt: Excerpt from Home and Farm Preparation of Vinegar The bottled Vinegar may be pasteurized by heating the bottles in water in a tank or tub to a temperature of from 140° F to 150° F until the contents of the bottles reach 140° F. This requires about 30 minutes at 140° to 150° F. This method of pasteurization is discussed more fully in Circular 31314 and Extension Circular Pasteurization also may be accomplished by heating the vinegar in bulk to 140° F, cooling to 7 0° F, and then bottling. Pasteuriza tion is usually not practiced except in large factory-scale operations. It is usually dispensed with in the farm-scale manufacture.
