Book excerpt: Water is arguably the most critical and least understood of the foundation elements in brewing. For many brewers used to choosing from a wide selection of hops and grain, water seems like an ingredient for which they have little choice but to accept what comes out of their faucet. But brewers in fact have many opportunities to modify their source water or to obtain mineral-free water and build their own brewing water from scratch. Much of the relevant information can be found in texts on physical and inorganic chemistry or water treatment and analysis, but these resources seldom, if ever, speak to brewers. Water: A Comprehensive Guide for Brewers takes the mystery out of water's role in the brewing process. This book is not just about brewing liquor. Whether in a brewery or at home, water is needed for every part of the brewing process: chilling, diluting, cleaning, boiler operation, wastewater treatment, and even physically pushing wort or beer from one place to another. The authors lead the reader from an overview of the water cycle and water sources, to adjusting water for different beer styles and brewery processes, to wastewater treatment. It covers precipitation, groundwater, and surface water, and explains how municipal water is treated to make it safe to drink but not always suitable for brewing. The parameters measured in a water report are explained, along with their impact on the mash and the final beer. Understand ion concentrations, temporary and permanent hardness, and pH. The concept of residual alkalinity is covered in detail and the causes of alkalinity in water are explored, along with techniques to control alkalinity. Ultimately, residual alkalinity is the major effector on mash pH, and this book addresses how to predict and target a specific mash pH—a key skill for any brewer wishing to raise their beer to the next level. But minerals in brewing water also determine specific flavor attributes. Ionic species important to beer are discussed and concepts like the sulfate-to-chloride ratio are explained. Examples illustrate how to tailor your brewing water to suit any style of beer. To complete the subject, the authors focus on brewery operations relating to source water treatment, such as the removal of particulates, dissolved solids, gas and liquid contaminants, organic contaminants, chlorine and chloramine, and dissolved oxygen. This section considers the pros and cons of various technologies, including membrane technologies such as filtration, ion-exchange systems, and reverse osmosis.

Don't miss these two favorites from beloved author Tina Leonard! Frisco Joe's Fiancée When twenty women appeared at the Union Junction Ranch, Frisco Joe Jefferson smelled one big rat. The ladies claimed to have answered a housekeeper ad, but Frisco could spot matchmaking at ten paces. He almost shooed them away—then he looked into single mom Annabelle Turnberry's beautiful blue eyes, and "go away" became "stay." But the once-burned, twice-shy Annabelle might need more sweet-talking than this tough guy can give. Laredo's Sassy Sweetheart Laredo Jefferson was on his way out of Union Junction to discover the Something Big he was destined for. Until sweet Katy Goodnight managed to convince him to delay his departure so that he could ride a bull for charity. But when he fell off the bull and injured himself, he was forced to stick around a little longer. Which was fine with Katy, as she was more than willing to nurse her hero back to health. And if he couldn't always be gentlemanly, that would be more than all right with her!

Book excerpt: Flight Lieutenant Frank Clark died in a fiery collision between two Spitfires in the war-torn skies over Normandy. He left behind a one-year-old son and a thirteen-year-old brother. These two had an intense interest in trying to piece together the life and times of Frank Clark. However, there was no stash of photographs, no neat pile of letters, no log book, no diary. Then serendipity stepped in. A dozen photographs of Frank came to light and a cache of 50 letters written to his best friend. These letters revealed a colourful, flesh and blood person whose youth, vitality and good humour sprang out from the pages. This book is that story.

Book excerpt: Open Season Game warden Joe Pickett hears two sharp gunshots ring out months before hunting season and it's his job to investigate. But then a poacher turns up dead in the Pickett's backyard. How did the dead man get to his house? What was in the empty cooler by his side? And why do his colleagues want to sweep the case under the rug? Battling grudge-holding neighbours, corrupt officials and out-of-town activists, Joe begins to unravel a mystery that threatens both his life and the family he loves. Savage Run Game warden Joe Pickett is called to a bizarre crime scene deep within the forests of Twelve Sleep County, Wyoming. Famous eco-activist Stewie Woods has been blown up in an explosion, along with his new bride and ten head of cattle. With two unlikely allies at his side, and two hired killers on his heels, Joe can't avoid the legendary Savage Run - a treacherous, isolated canyon with no crossing... Winterkill It's an hour away from darkness, a bitter winter storm is raging, and Joe Pickett is deep in the forest edging Battle Mountain, shotgun in his left hand, his truck's steering wheel handcuffed to his right - and Lamar Gardiner's arrow-riddled corpse splayed against the tree in front of him. Lamar's murder and the sudden onslaught of the snowstorm warn: Get off the mountain. But Joe knows this episode is far from over. And when his own daughter gets caught up in his hunt for the killer, Joe will stop at nothing to get her back... Trophy Hunt Local authorities are quick to label a rash of animal mutilations as the work of a grizzly bear, but Joe Pickett suspects that something far more sinister is afoot. And when the bodies of two men are found disfigured in the same way, his worst fears are confirmed: A modern-day Jack the Ripper is on the loose - and the killings have just begun. Out of Range A good friend, and fellow game warden, has killed himself, and Joe Pickett's been chosen to temporarily run his district. But Jackson, Wyoming, is a far cry from Joe's - and it doesn't help that Joe feels compelled to investigate the circumstances surrounding his friend's suicide. But as he comes closer to the truth, the more his own life spirals out of control - and he realizes that if he isn't careful, he may be Jackson's next victim... In Plain Sight Local ranch owner and matriarch Opal Scarlett has vanished under suspicious circumstances during a bitter struggle between her sons for control of her million-dollar empire. Book excerpt: This brilliant story of one man’s struggle to change his life, from the acclaimed author of Ninety-two in the Shade and Cloudbursts, is “full of wry wit and graceful depictions of family relations, first love and the stark beauty of the Montana prairie” (Wall Street Journal). Joe Starling, a man teetering on the edge of spectacular failures—as an artist, rancher, lover, and human being—is also a man of noble ambitions. His struggle to right himself is mesmerizing, hilarious, and profoundly moving. "No American novelist provides greater pleasure—sentence by sentence, paragraph by paragraph, page by page—than this Montana icon." —Chicago Sun-Times
