Book excerpt: Excerpt from A Scientific Investigation Into Vegetarianism Under pressure Of the brute realities Of the recent war, the minds Of men have been compelled to adopt a wider outlook as regards diet. For the first time, many have had to break away from the shackles Of flesh-eating prejudices and to consider the various substitutes for meat. In 1918, both at the Ecole de Médecine and in the press, many encomiums were lavished on our quasi-official crusade in favour Of a rational and a meatless diet. How many were converted by the demonstrations Of the possibility Of eating less flesh, and Of the advantage Of a vegetarian bill-of-fare? As a matter Of fact, vegetarianism constitutes a regime Of health and strength which enables man throughout his life to utilize all his faculties to the full. Available in PDF, EPUB and Kindle. Book excerpt: Nineteenth-century Britain was one of the birthplaces of modern vegetarianism in the west, and was to become a reform movement attracting thousands of people. From the Vegetarian Society's foundation in 1847, men, women and their families abandoned conventional diet for reasons as varied as self-advancement via personal thrift, dissatisfaction with medical orthodoxy, repugnance towards animal cruelty and the belief that carnivorism stimulated alcoholism and bellicosity. They joined in the pursuit of a more perfect society in which food reform combined with causes such as socialism and land reform. James Gregory provides an extensive exploration of the movement, with its often colourful and sometimes eccentric leaders and grass-roots supporters. He explores the rich culture of branch associations, competing national societies, proliferating restaurants and food stores and experiments in vegetarian farms and colonies. 'Of Victorians and Vegetarians' examines the wider significance of Victorian vegetarians, embracing concerns about gender and class, national identity, race and empire and religious authority. Vegetarianism embodied the Victorians' complicated response to modernity. While some vegetarians were averse to features of the industrial and urban world, other vegetarian entrepreneurs embraced technology in the creation of substitute foods and other commodities. Hostile, like the associated anti-vivisectionists and anti-vaccinationists, to a new 'priesthood' of scientists, vegetarians defended themselves through the new sciences of nutrition and chemistry. 'Of Victorians and Vegetarians' uncovers who the vegetarians were, how they attempted to convert their fellow Britons (and the world beyond) to their 'bloodless diet' and the response of contemporaries in a variety of media and genres. Through a close study of the vegetarian periodicals and organisational archives, extensive biographical research and a broader examination of texts relating to food, dietary reform and allied reform movements, James Gregory provides us with the first fascinating foray into the impact of vegetarianism on the Victorians. In doing so he gives revealing insights into the development of animal welfare, other contemporary reform movements and the histories of food and diet.

Book excerpt: Excerpt from Vegetarian Supplement to Scientific Feeding This book has been prepared to meet the needs of a constantly increasing number who for various reasons have adopted a vegetarian or near vegetarian diet. My experiences first as a nurse, later as a physician, have brought me in contact with many different nationalities, and from them has been gleaned much valuable information which has been used in the hope of aiding all who are earnestly seeking a safe and sane method of living, simple and rational methods of using vegetarian foods. It has been my special object to eliminate artificial sugar in the recipes as much as possible, also to pay special attention to correct chemical food combinations which are as important as their proper selection and preparation. My endeavor has been to perfect a system of hygienic feeding which avoids all such mixtures as tend to over-load the system with excess of starch and soft nitrogenous foods - an excess which results in malnutrition and dangerous diseases. The book is designed for all who do not desire meat in their bill of fare. It will serve as a handbook for summer cookery, containing menus and recipes which are in harmony with the laws of health. In adopting a raw food diet, or in reducing heat-giving elements, such as artificial sugars and hot drinks, it is important to apply more external heat to the body for a while, or else have the morning meal served in a sunny room. Plenty of outdoor exercise is necessary to properly utilize a vegetarian diet. In the preparation of this volume I have been assisted by several friends who are interested in the publication of such a work. It is my hope that this book will be instrumental in reducing the high cost of living as well as in lessening women's work and worry. The name is misleading. It has misled hundreds, if not thousands. Into a haphazard, unscientific, nu nourishing, bulky, indigestible diet Of which the physical effects may be simply lamentable. I utterly refuse to be called a Vegetarian if only for this reason. I believe that I can live perfectly well without any vegetables at all.
